In “Mia & Sebastian’s Theme,” the romantic feel is strewn with bravura piano improvisations, hinting at an appreciation for Art Tatum. The film’s Hollywood elegance is emphasized with orchestral interludes, as on the grand and swooning “Planetarium.”
